The kinetics of inactivation of enzymes during drying and particle formation will be determined. This will allow for the first time a correlation between residual moisture and the structural changes occurring to these biomolecules. An acoustic levitator will be used that is equipped with a Raman spectrometer, a fluorescence spectrometer as well as a tunable diode laser absorption spectrometer (TDLAS). The results serve as a basis for s comprehensive numerical model will be devised to describe the complex relations between drying and particle formation conditions and the changes taking place to the enzyme molecule.
